Simple Tomato Pasta 🍝

Serves 2 · 20 minutes

Ingredients

  • 200 g pasta
  • 2 tbsp olive oil
  • 2 garlic cloves, sliced
  • 1 can diced tomatoes
  • Salt, pepper, chili flakes
  • Fresh basil or parsley (optional)

Steps

  1. Cook pasta in salted water until al dente.
  2. Sauté garlic in olive oil 30–60 seconds.
  3. Add tomatoes, simmer 8–10 minutes. Season.
  4. Toss with pasta. Finish with herbs.

Fresh Fruit Salad 🥝

Serves 3–4 · 10 minutes

Ingredients

  • 2 cups mixed fruit (berries, apple, orange, kiwi)
  • 1 tbsp lemon or lime juice
  • 1 tsp honey or maple (optional)
  • Mint leaves (optional)

Steps

  1. Chop fruit into bite-size pieces.
  2. Toss with citrus and sweetener.
  3. Top with mint and chill briefly.

Quick Veggie Stir-Fry 🥦

Serves 2 · 15 minutes

Ingredients

  • 2 cups mixed veggies (broccoli, carrot, pepper)
  • 1 tbsp oil
  • 2 tbsp soy sauce or tamari
  • 1 tsp grated ginger (optional)
  • 1 tsp sesame oil (optional)
  • Cooked rice or noodles, to serve

Steps

  1. Heat oil in a pan over high heat.
  2. Stir-fry veggies 3–5 minutes until crisp-tender.
  3. Add soy sauce and ginger; toss to coat.
  4. Finish with sesame oil. Serve over rice.
